Chicken pizzioli
When we were kids, Dad made what he called his "famous chicken pizzioli." He chopped up chicken, seasoned it up, put it into a baking dish with spaghetti sauce, covered it in garlic and shredded cheese, and baked it. Something about the chicken baking in the sauce made it taste so good.
Hotdogs and eggs
I don't know where this one came from but it was delicious. Scramble the eggs, then throw in hotdog pieces (sliced longways in half, then longways in half again, then chopped into bite-size pieces). Don't knock it til you try it.
Tuna with finely chopped carrots and broccoli
Dad liked canned meat—mostly sardines and tuna. He'd eat sardines straight out of the can, but he preferred his tuna a little fancier. He would chop up carrots and broccoli into such tiny pieces, they were hardly recognizable. He wanted it to blend equally throughout the tuna. It was a good way to add veggies but it also kicks the flavor up a notch. Add a little mayo and mustard. Bon appétit.
